The water. The first is to fill your kettle with fresh cold water. If from a tap, let the water run a few moments for a better result. Do not use water that has been sitting half the day waiting to be used.

The kettle. It is best to use a glass or steel kettle, both are materials that will not add any outside flavor or character to the tea. That is not always possible, of course, if you are brewing your tea away from home and are forced to depend upon some other vessel.

Heating. If the tea needs the water at a full boil (see chart below) let it boil for a few minutes until it reaches the state of what the experts call a "rolling boil." Some say to pour some of the boiling water into the teapot, swirl it around and dump it to prewarm the pot in order to avoid lukewarm tea in the end.

Measuring and steeping. The amount of tea you use really depends on how strong you like it. For most the rule is a teaspoon of leaves or a teabag for each cup plus one extra for the teapot. We sell a perfect sized measuring spoon that is just right for tea. Pour the boiling water over the tea, never the other way around. If you like, place a tea cozy over the pot and let it steep for about three to five minutes.

Additions. Milk and sugar will not enhance the flavor of any high quality teas. For the most part, good quality teas do not need to be masked, sweetened or diluted. But if you must, you must.

If you are going to add milk to your tea, we suggest you do it after the tea is poured and done while stirring. This way you will be able to tell from the color when the just right amount has been added.
